Default Stop autopilot/autoplay?

I don't really know my terminology, but my friend pointed out that my last stream was replaying itself on my channel hours after I had stopped streaming and left.

Is there a way to stop it from auto-playing and just keep the channel offline unless I stream?

Yes, you can change your channel back to offline by removing the storyboard from under Auto-pilot playlist from your channel studio. Please review the following link for further information: http://www.livestream.com/userguide/...o_on_autopilot

This doesn't work. It keeps on replacing it after 30 seconds with the storyboard.

I want the Offline screen back. How do I get it?

You would need to hit "restart autopilot" after removing the storyboard.
